
Massaman Curry
A mild, slow-cooked curry with warming spices and rich flavour — perfect for relaxed home cooking.
Equipment
- Large pot or casserole
- Knife and chopping board
- Wooden spoon
Ingredients
- 2 tbsp massaman curry paste
- 400 ml coconut milk
- 500 g beef or chicken
- 2 potatoes, diced
- 1 onion, sliced
- 1 tbsp fish sauce
- 1 tbsp palm sugar (or brown sugar)
- 1 tbsp roasted peanuts (optional)
Instructions
- Heat coconut milk and curry paste in a pot until fragrant.
- Add meat and cook until lightly browned.
- Add potatoes, onion, and remaining coconut milk.
- Simmer for 30–40 minutes until tender.
- Season with fish sauce and sugar.
- Finish with peanuts and serve with rice.
