Massaman Curry

A mild, slow-cooked curry with warming spices and rich flavour — perfect for relaxed home cooking.

Equipment

  • Large pot or casserole
  • Knife and chopping board
  • Wooden spoon

Ingredients

  • 2 tbsp massaman curry paste
  • 400 ml coconut milk
  • 500 g beef or chicken
  • 2 potatoes, diced
  • 1 onion, sliced
  • 1 tbsp fish sauce
  • 1 tbsp palm sugar (or brown sugar)
  • 1 tbsp roasted peanuts (optional)

Instructions

  • Heat coconut milk and curry paste in a pot until fragrant.
  • Add meat and cook until lightly browned.
  • Add potatoes, onion, and remaining coconut milk.
  • Simmer for 30–40 minutes until tender.
  • Season with fish sauce and sugar.
  • Finish with peanuts and serve with rice.
