The Journey Begins: Bill Travels to Thailand

On 1st February 2026, I boarded a plane and left the UK with one clear intention, to reconnect with Thailand, not as a tourist, but as someone returning to a part of himself.

For the first chapter of this journey, I’ll be based primarily in Bangkok, using the city as a starting point to explore the food, culture, people, and traditions that make Thailand one of the most exciting culinary destinations in the world.

This trip isn’t about ticking off landmarks. It’s about depth.

I’ll be meeting with local chefs, visiting rice fields and suppliers, spending time with family, and immersing myself in the rhythm of everyday Thai life. From early-morning breakfasts at street stalls to late-night market dinners, hidden neighbourhood restaurants, and places you’d never find without local knowledge.

Along the way, I’ll be:

  • Developing and refining authentic Thai recipes to share with you
  • Recording daily vlogs and behind-the-scenes content
  • Documenting the stories, ingredients, and techniques that define real Thai cooking
  • Gathering inspiration for future restaurants, cookbooks, and my upcoming cooking school

Everything I learn here will come back with me, not just as memories, but as knowledge, skills, and experiences that will shape everything I create next.

While I’m in Thailand, I’ll also be sharing a mix of free and paid itineraries for anyone planning a trip of their own. These guides go beyond the usual recommendations and are built around real experiences. I will also be arranging a collection of different meet-up experiences. These will include meeting for breakfast, walking local markets together, discovering hidden gems, and spending time in places that feel truly Thai. Real hidden gems that you won’t get unless you know the local area.

For some, that might mean a morning noodle stop and market meet-up.
For others, a full day exploring food, culture, and stories side by side.

This is about opening doors, sharing access, and showing Thailand through the eyes of someone learning, rediscovering, and falling in love with it all over again.

I’ll be sharing updates regularly here on the site, as well as across my social channels, so you can follow the journey as it happens, in real time.

This is where it really begins.
